Fresh Matcha ice cream

A fresh ice cream treat on a summer day!
Put the coconut cream, xylitol, lime juice, cashew butter and mint in a blender and puree until smooth. Add matcha powder, puree and taste. Add more if needed. Also add a small amount of lime zest and taste. Add a pinch of salt to bring out the flavors and give it another whirl. ⁠

Pour into the bowl of the ice cream maker and make ice cream. (If you don't have an ice cream maker, pour the mixture into a bowl and put it in the freezer. Stir around the edges every half hour.) Put it in a freezer-proof container and put it in the freezer or serve it right away!⁠

Guide:

5 dl of fatty coconut cream

0.5 dl birch sugar (xylitol)⁠

2 tablespoons cashew butter⁠

1-2 teaspoons Puhdas+ matcha tea powder

A large handful of fresh mint (or basil)

Juice of 1 lime and a little zest

a little pinch of salt
