Sweet potato-based pizza with cashew spread

Delicious sweet potato pizza base!
Peel and grate the sweet potato, add it to the blender with the oatmeal. Stir. Add the rest of the base ingredients and mix into a smooth dough. Press the base onto a baking sheet lined with baking paper. If you want, you can make one big base or 2 smaller ones. The base should be about 1 cm thick. Bake the base at 200 degrees for 25-30 minutes until the surface is dry. Turn the base over, carefully remove the baking paper and bake for another 5-10 minutes.

Prepare the cashew spread: blend the soaked cashews and other ingredients in a blender. Note! Add water a little at a time until the consistency is right. Cover the fried base with cashew spread and other toppings of your choice, use it again in the oven if necessary and enjoy!

Base:

1 medium-sized sweet potato (approx. 4 dl)

1.3-1.5 dl of oatmeal

1 tablespoon Puhdas+ Oat fiber

1 egg

½ tsp salt

 

Cashew spread:

2 dl cashew nuts, soaked for 4 hours

1 dl of water

1 small garlic clove

1 tablespoon Puhdas+ nutritional yeast flakes

2 tablespoons of lemon juice

A pinch of salt

 

Filling:

roasted red onion

kale chips

artichoke hearts
